Herb hibernation?

How does herb hibernation work? Does it matter if one harvests during the hibernating month? Does it matter if one harvests during the preceding month? (as long as I don't harvest to 0)

It does not matter if you harvest during that time, in terms of the plant actually dying or not. The chance of the herbs dying if the location is not guarded are the same each and every day tick, fully stocked or no. If you do harvest the months around it, regeneration is a lot slower so you end up hurting yourself more because you've got that much less stock to replant with in whatever rooms do survive.

Roughly an herb an hour, closer to two at its peak month. Give or take a few, cause there's a random element, too, and a few artifacts and skills that increase it.

EDIT: When the stack is below five it's slower.
