So why does it feel more and more difficult to get the tradeperson I'm needing?
You need to be in an organization with multiple people (ab)using those options to really benefit. A lot of us don't really skillflex for outsiders, since that chews up an entire hour's worth of skillpoint use (so doing it too often can actually prevent you from changing something else when you really want to).
And the fact that tattooists are the hardest to find. Ever.

Tattooing without a needle is a painfully long process, during which I cannot clan chat or browse auctions, as I discovered just now. That might be why people don't exactly go out of their way to sit down and ink someone.
On the bright side, I've gotten some good RP time out of this. So... silver lining?
Tattooing can be a pain. The artifact needle makes a huge difference, but I think you are more or less limited to using says since tells and other things throw it off too.
That being said, I am willing to do tattoos for folks since I have a needle if you aren't tradebanned from Serenwilde.

The last few times I've logged on, I've done pretty much nothing but enchant rings and cubes for hours. And almost all of that just came from within Magnagora.

AFAIK, there has never been any evidence of demiplanes period! Mist is merely a form of water, much like ice.
They're pretty cool, but not amazing demi-planes or anything.

Because some trades are more limited when it comes to the guilds able to do it. Tattoos and specific enchanters particularly.
That being said, I am willing to do tattoos for folks since I have a needle if you aren't tradebanned from Serenwilde.
